to bake - Kid Kookie
Made some healthy 'hairdress smileys' cookies made for my favorite monster who is heading back to school.
These are made with just almond flour, coconut oil, maple syrup, seasalt and vanilla!
heir little hairdo is made from coconut oil and raw cacao!

Kid Kookies
recipe: inspired by The Whole Pantry App and Being Biotiful
recipe type: to snack, to dessert, to kids
cuisine: glutenfree, dairyfree, vegan, plantbased.
What you need:
1 1/2 cup of almond meal - make this yourself by blending 1 cup of almonds in a high speed blender.
2 1/2 tbsp of coconutoil
2 tbsp maple syrup
1 teaspoon vanilla extract
1/4 teaspoon sea salt flakes
1/4 teaspoon baking powder
What to do:
Preheat the oven at 170C.
If making your own almond, add 1 cup to a food processor. Don't overblend we don't want almond paste for this recipe.
Melt the coconut oil
Combine all the ingredients in a bowl.
Roll out the dough, by using a cookie cutter to create some round smiley shaped cookies. And draw some faces on them, using a knife, your fingers,... This is of course, we are making kids versions.
Bake 12-15 min until golden.They will firm up as they cool.
For the chocolate sauce:
what you need:
1/3 cup cacao powder or carobe powder
1/2 coconut oil
1/4 maple syrup
what to do:
Melt 1/3 cup of cacao powder or carobe powder with 1/2 (120ml) cup of coconut oil and add
1/4 (60ml) cup of maple syrup.
Combine untill you have a smooth and creamy texture. This will harden as it sets.
Assemble:
Take the cooled cookies and dip them in the sauce and create some fun haircut shapes.
This is when you want to create some cookies for kids. You could also just dip them in chocolate all over, half, only the bottom,...
