When this recipe popped up in her feed I just had to make it!!!
With my birthday coming up, it was the perfect occasion!
Vegan Cardamom Lime and Poppy Seed Ice Cream

what else: glutenfree, dairyfree, vegan, raw, plantbased
what you need:
for aprox. 12 ice cream sandwiches
1 + ½ cup activated raw cashews for at least 8 hours
½ cup of filtered water or coconut milk
3 tablespoons of maple syrup
skin of 1 organic lime
juice of ½ lime
3 seeds of cardamom
2 tablespoons of poppy seeds
what to do:
Strain and rinse the cashews.
Put them in your high speed blender and blend with the rest of the others ingredientes, except for the poppy seeds.
Blend until creamy and smooth. At the end, add the poppy seeds and blend for some seconds.
Put the cream in a mold and put it in the freezer for 2-3 hours.
Put out of the freezer some minutes before serving. With a spoon, spread on cookies - I used Quinette, they are gluten-free and vegan - but you could use any cookie of choice!
