to make - cauliflower rice pudding
We have been subsituting rice for cauliflower since a bit now...
Think cauliflower pizza crusts, cauliflower rice, cauliflower sushi rolls...
So why nog try a Cauliflower Rice Pudding??!
Found an inspirational recipe through the Well+Good NYC website
Cauliflower Rice Pudding

makes: 1 serving
what you need:
1 cup of shredded cauliflower
1/2 cup of coconut-ricemilk. You could use almond / rice / cashew,...
a few drops of stevia, honey or maple syrup according to taste. Don't forget, sometimes your milk is sweet enough
1 tbsp cinnamon.
1 staranise.
¼ cup egg whites OR a flax egg. - if vegan - mix 1 tbsp of flax seeds with 3 tbps of water set aside for a few minutes
what to do:
To make the shredded cauliflower, simple place the cauliflower in batches in your blender. Don't overblend. You still want some texture, to give it some crunch!
Prepare the flax egg if you want to make this vegan, or if you want to foodcombine.
Add 3 Tbsp of water to 1 Tbsp of flax seeds in a glass, wisk and set aside to thicken and become gooey.
On low heat, cook the shredded cauliflower with the milk of choice.
Add in the cinnamon - i love cinnamon, so add a lot -, stevia, staranise... and the flax egg.
Mix, let it simmer and stir until thickened.
