Using beets in the kitchen is a dangerous yet fun endevor!! Fun fact, it colors everything pink. Not so fun fact: It colors everything pink. So be careful when peeling a beetroot in your new creme colored cashmere.
The juice of the beetroot dyes the white daikon in lovely pink and creates the coolest pink spaghetti!
Pink Ribbon Beetroot Daikon Spaghetti with Thyme Honey
recipe type: to salad, to lunch,to raw

what you need:
4 red beets
1 white daikon
8 tbsp of olive oil
4 tbsp of lemon juice
2 tbsl of mustard
2 tbsp of thyme honey - use thyme infused agave, rice, maple syrup to create a vegan option.
pepper and salt
a handfull of edible flowers
what to do:
Peel the red beets by using a potato peeler. Create thin slices by using a mandoline or the potato peeler.
Peel the daikon and make ribbons as long as possible by using the potato peeler.
Pour the olive oil, lemon juice, mustard, thyme honey in a jar. Close it and shake until well combined.
Place the red beets, the daikon and the dressing in a bowl. By using your hands mix until everything is wel covered in dressing. Add pepper and salt if desired.Plate and finish with edible flowers.
