to make - Chili Rhubarb Ice Cream Sandwiches With Black Forest Chia Crust
Adelaster Food Textures created a spicy ice-cream sandwich. The sandwich part is, for me, the most genius part of it all... It's made with blackberries, blueberries, chia seeds and a little almond meal! Clever!! Mostly low GI berries and wonderful chia seeds, glutenfree and plant protein almonds. It's a fresh and spicy rhubard ice cream - vegan! - middle smashed in between chewy forest berries cookies!! Yum!!!
CHILI RHUBARB ICE CREAM SANDWICHES WITH BLACK FOREST CHIA CRUST

( makes 4 big size or 8 small size, use round cookie cutters to build your sandwiches )
FOR THE CRUST
In a blender glass put 2 dl blueberries and 1 dl blackberries, add 1 table spoon of coconut oil, 2 tablespoon of water, 1 teaspoon honey or agave and blend!
In a bowl put 1 dl of chia seeds and pour the berry mix in little by little and stir. Let sit for 20 min too make the chia seed swell.
Returning to the mix ad about 1/2 dl almond meal but depending on the thickness of the chia mix you might want a little less or more! The mix should be sticky and half firm ( not hard and not to soft )
FOR THE ICE CREAM
what you need:
( makes about a litre )
8 stalks of fresh rhubarb
6 big frozen strawberries
Lemon zest from 1 lemon - I used 2, cause I love lemons! ;-)
Small pinch of chilli
1/4 cup of shredded coconut
6 table spoons of water
1/2 cup ( 1.2 dl) of honey or Agave nectar
2 cups of coconut milk ( 5 dl )
Lemon juice from half a lemon
what to do:
In a pot put the cut rhubarb and strawberries, lemon zest, coconut flakes, chilli, water and honey( or agave ) slowly melt the mixture and then blend with a stick mixer! Chill this mixture in the freezer until very cold, hit it with the mixer one more time before mixing with the coconut milk and the lemon juice! Chill this mixture again and make shore its very cold ( but not frozen hard obviously ) before putting it in the ice cream machine for 30 min ( or what your machine says )
To assemble:
Put the cookie cutters on a tray with baking paper that fits your freezer, put a thin layer of crust in the bottom, a thicker layer of ice-cream in the middle and finish of with a crust layer! If you like it to be very precise then freeze every layer separately!
Notes:
After the ice cream sandwich is frozen solid, you might want to let it sit in room temp for 20-30 min before serving! And you will have left over ice cream to eat in the kitchen, don't forget to keep your mix cold or it will just become slushy in the ice-cream maker! You can also make a quick "nice cream" and put in the middle if you don't have an ice cream machine! Happy cooking
