to cook - abundance bowl of sunflower risotto
love creating abundance bowls; but because of my blood type I should avoid grains.
So this one is made from steamed sunflower seeds. ( soaked, sprouted and steamed), no rice in this risotto!
This dish was inspired by a Risotto I had on my birthday at Relea in Copenhagen... It was sunflower risotto with grated cheese! Soooo delicious! And I taught it was pretty genius using sunflower seeds!
I added grilled butternut in star-anis and cinnamon,
broccoli stem ( beneficial for blood type O),
steamed kale ( beneficial for blood type O)
zucchini, fennel ( good for the digestion),
parsley ( beneficial for O and vata )
mint ( love love love)
and a sauce of roasted pumpkin seeds, ginger, lemon, pepper, garlic.
I roasted everything with ghee, as I should avoid coconut oil and ghee is beneficial for both blood type and aryuvedic diets.
And by the waaaay!!
Steamed sunflowers taste juts like popcorn!!!

Abundance bowl of sunflower risotto

what you need
Sunflower Risotto
1 cup sunflower seeds, soaked sprouted and steamed
(just like you would steam your quinoa or rice, just wing it a bit)
butternut roasted with star anis and cinnamon
kale steamed
grated zucchini, fennel, broccoli stem
add fresh flat parsley and fresh mint
Garlic-Ginger Pumpkin Seed Sauce
Ingredients approx.
1 cup pumpkin seeds
3 cloves garlic
knob of fresh ginger
1 Tbsp. maple syrup
3 Tbsp. olive oil
1 Tbsp. apple cider vinegar
3 Tbsp. lemon juice
¾ -1 cup /175- 250 ml water
¾ tsp. fine grain sea salt
¼ tsp. cracked black pepper
cayenne pepper to taste
this makes a lot, so you will have enough for another bowl!!
